Ingredients: 2 1/2 pounds of wings trimmed and separated, 1 cup flour, 2 tablespoons corn starch, 2 teaspoons baking powder, 1 teaspoon salt, 1 cup water, 2 teaspoons crushed red pepper flakes, 1 teaspoon cayenne, 1 teaspoon freshly ground black pepper, 1 teaspoon thyme, 1/2 teaspoon allspice, 1/2 teaspoon mace, vegetable oil for deep-frying

  • Combine flour, corn starch, baking powder, salt, water, and spices and herbs in a bowl. Mix well, but only to combine.
  • Dip wings in batter. It is not necessary to completely cover wings with batter, just as much as possible.
  • Heat oil to about 370 degrees. Deep-fry wings, a few at a time, until nicely browned and crisp, about 10 to 15 minutes. Drain on a paper-towel-lined plate.
